This Counoise is sourced from two of the finest vineyards in California, 66% Alder Springs Vineyard in Mendocino and 34% Windmill Vineyard in Dunnigan Hills in Yolo County.

Very much a rare find here in California; Counoise is almost never seen as a standalone grape except here as it really shines as the star

Method

An extremely thin skinned grape this one was handled very gently, and fermetned in stainless steel. Aged in 500L neutral oak barrels for a year this version of our old favorite is perhaps the lightest and most versitile on the table wine we've ever made.

Enjoy

Drink this wine with literally anything. Serve it chilled with shell fish, your favorite cured meats or at a more classic temperature and open the menu up to a peppery roasted chicken and root vegetables. Can't go wrong!
